Oatmeal with raisins, flax and chia seeds

1 cup dry old-fashioned oats
2 tbsp. chia seeds*
4 tbsp. flax seeds
1/3 cup packed raisins (or substitute one large mashed banana or one large diced apple)
2 cups water
1 tbsp cinnamon

Combine all ingredients in sauce pan over high heat until boiling. Cover, remove from heat and let stand for 15 minutes. Makes 2 servings with approximately 353 calories each.

*Chia seeds have an odd, kind of gelatinous texture that many people find off-putting. However, they are a great source of omega-3 fatty acids, fiber, calcium, iron and protein. It might take a little while to get used to the texture, but it’s worth it.
