- 1/2 cup diced mango
- 1/2 cup diced pineapple
- 1/2 cup diced papaya
- 1/4 cup minced banana
- 1/4 cup diced mandarin orange sections
- 2 tbsp diced purple onion
- 1 tbsp minced cilatro
- splash of lemon juice
Mix lemon juice with banana to keep from browning. Mix all ingredients together, adjusting onion and cilantro to taste. I use this on oily fish like salmon after it’s grilled. The fruit acids cut the fish oil, neutralizing the flavor a bit.
